The Spritz cocktail dates back to 19th century Italy, when Austrians would dilute local wines with a splash of water. Over time, it evolved into the bubbly aperitivo we love today — with bitter liqueurs like Aperol and a splash of soda water. National Spritz Day celebrates this timeless drink every August 1st.
